Meet Superfood Bakery's organic lemon and poppy baking mix, which has been made with accessibility and inclusivity in mind. This clever mixture is super easy to use and can go from box to warm on your plate in under half an hour.

Plus, you won’t need to go hunting for expensive ingredients or complicated kitchen equipment. It’s also important to Superfood Bakery that absolutely everyone can enjoy a slice of their lemon and poppy loaf, so the mixes are 100% natural and organic, but also vegan-friendly, gluten-free and dairy-free.

There are no nasty ingredients like hidden sugars or preservatives, just the wholesome stuff. There are so many ways you can dress your loaf once it’s cooled. Whether it be a simple lemon glaze, candied orange slices or grated lemon rind with a drizzle of plant-based cream, all options are delicious!

Makes 1 loaf or 10 cupcakes.


Buckwheat flour*, brown rice flour*, unrefined cane sugar*, poppy seeds* (5%), milled flaxseed*, gluten-free baking powder monocalcium phosphate, corn starch, sodium bicarbonate). *Ingredient from organic agriculture.


Storage Instructions:

Store in a cool, dry place. Once made, store in an airtight container and consume within 5 days.


Recipe:

  1. Heat the oven up to 170°c. Grease a loaf tin with a glug of vegetable oil. Zest or finely grate one lemon, and then, juice 2 lemons, getting all of that zingy goodness out.
  2. Mix 150ml of dairy-free milk, 65g melted vegan spread and the lemon juice and zest together into a smooth batter.
  3. Pour into your greased loaf tin, pop into the oven and bake for 45 minutes (or until a knife inserted into the centre of the loaf comes out clean).
  4. Once baked, leave the loaf to cool on a wire rack before devouring it whole, or jazzing it up, using our ideas on the back of the product box.
