Pasta Lensi Gluten Free Penne 400g

Cut the Parma ham into strips. Clean the zucchini, remove the ends then cut them in half in the long verse and slice them. Chop the peeled shallot. Meanwhile place a large pot of salted water on the fire and bring to a boil. In a cooking pan melt the butter over low heat and then add the Parma ham strips. Toast the ham for about 6 minutes and when crisp place on a tray with blotting paper to remove the excess fat. In the same cooking pan add the shallot and the zucchini. Cook over medium heat for 10 minutes, adding, when required, the cooking water of the pasta to avoid the preparation from drying. When the zucchini are tender place them in a blender or food processor until a purée is obtained. Add the pasta to the boiling water and cook according to package instructions. Drain the pasta 3 minutes before it is ready and place in the cooking pan, keep aside some cooking water. Add the ham and the zucchini mix and a cup of cooking water and continue cooking. Then add the strips of ham, the grated provolone cheese and the thyme leaves. Add salt and pepper to taste. Serve immediately.
