"Our black olives come from an area famous for olives groves since antiquity: the aegean, home to Troy, Homer and the first ever currency in the world. Olived are mostly picked unripe, in their green state and then chemically treated to obtain the dark black colour. They might look pretty, but they taste quite bland. Organic olives by contrast are picked ripe when the colour has turned toward black - a black olive in it's natural state is always more a darkish brown. We don't pit our black olives because being ripe they are softer. We use a simple herb brine.
