Just add eggs or egg replacement powder, grated carrot and margarine dairy or soya to make a 2 tier 6in cake.

Gluten free flour, dried carrot flakes, gluten free baking powder, cinnamon, xanthan gum, sugar.

Preheat oven to 180°C/350°F/Gas Mark 4. In a bowl melt 100g/3.5oz margarine. In another bowl whisk 2 eggs. Wash and grate 2 carrots. (Suggestion: add 60g/2oz of walnuts and sultanas). Whisk all together with cake mix. Pour the mixture into 2 greased 6in/15cm cake tins. Cook for 20 mins. Alternatively, pour mixture into one 7in/18cm greased cake tin an cook for 25 min at 170°C/325°F/Gas Mark 3.
