Cake Mix with Coconut Blossom Sugar. Easy to use. makes 2 x 7ich cakes or 2 small loaf sized, or 12 cupcakes. Free from Egg, nuts, Gluten, wheat, soya, dairy. suitable for Vegans (use oil to bind), or can be made with egg.

Gluten Free Plain Flour (Rice, Potato, Tapioca, Maize, Buckwheat), Granulated Sugar, Coconut Blossom Sugar (18%), Raising Agent (Mono Calcium Phosphate, Corn Starch, Sodium Bicarbonate), Potato Starch, Poppyseeds (2%), Natural Lemon Powder (1.7%) (Natural Lemon Flavourings, Maltodextrin, Gum Arabic), Tapioca Starch, Bicarbonate of Soda, Acidity Regulator (Citric Acid)

Our Free and Easy Lemon & Poppyseed Cake is easy to prepare and utterly delicious. Simply mix the ingredients, pop them in the oven and enjoy a slice of this wonderful 'free from' treat!

What You'll Need:
125ml Vegetable Oil (we would recommend sunflower or rapeseed oil)
1 Large Egg
105ml Milk (Use a dairy free alternative if preferred)

Cooking Instructions:
1. Preheat your oven to 160ºc / 150ºc (fan) / gas mark 4
2. Empty the contents of both the cake mix sachet and poppyseed sachet of your Free and Easy Lemon & Poppyseed Cake mix into a bowl (or just the lemon sachet if you want to make a plain lemon cake)
3. Add the oil, milk and egg (or if you're making a vegan cake, the oil and water) and whisk until combined. We'd recommend using an electric mixer on low speed for 1 minute, scraping down the bowl then mixing on high for a further 4 minutes to ensure your cake rises
4. Spoon or pour the mixture into your prepared cases or tins and bake (for cook times see side of pack, cooking times may vary a little depending on your oven)
5. Cool on a wire rack, decorate to your heart's content and dive in!

To Make the Perfect Vegan Cake:
140ml Vegetable Oil
115ml Water
Add the oil and water. Prepare as per the other instructions. The mix already contains a vegan egg replacer to help it rise, and will work well to make it a 100% vegan cake, although it will be slightly less fluffy.
