Made using free range egg yolks, Scotch Bonnet chillies, apple cider vinegar and a handful of other ingredients that everyone knows and can pronounce, Dr Will’s Spicy Mayonnaise is the must-have spicy condiment of the season. Scoop it on to smashed avocado on sourdough toast, spread it into bao buns, Baja tacos, burgers and bánh mì, or dip crisps, sausages or crudités into it. Then wait for the growing heat of that spicy infusion to creep up on you in the most delicious manner.

The bespectacled Dr Will is a real doctor, not a doctor of condiments or a fake like Dr Dre or Dr Fox, but an actual real-life doctor. He met a restaurateur called Josh at a crossfit class and both being interested in health and food the pair got to discussing the distinct lack of natural condiments on the market. And so they set about creating their own free from refined sugar, additives and preservatives. After testing them on the unsuspecting guests at Will’s wedding and punters at Josh’s restaurant, the Dr Will’s brand was born.

Recently there’s been a lot of claims in the press that “millennials are killing mayonnaise”, but this is blatant nonsense. It may not be the go-to choice for sandwiches anymore, but it has become a staple in tacos, sushi rolls, poké bowls, elote, fried chicken, okonomiyaki, slaw, remoulade and so much more. We reckon that statisticians are watching the wrong brands, as sales of Dr Will’s are through the roof.
