The Japanese production is very important, mostly in green teas drunk on-the-spot (3% export). The garden notion does not exist, we talk about types of teas, districts specialities with different qualities. This tea comes from Shizuoka region where it's picked in autumn when Bancha leaves are mature. Highly roasted, this Hojicha contains three times more volatile aromas compared to Bancha. This comes from the heating of amino-acids, such as theanine (the most present amino-acid contained in tea). Experts will recognize an extremely rare Hojicha of a great quality with a very pleasant perfume, giving a sweet sensation in mouth. Less theine than in other green teas and soft for your stomach, its brew gives a nice amber colour.

Bring fresh water to a boil, allow to cool slightly, thenpour over a bag as you steep 2-3 minutes. For iced tea, steep 2 tea bags, cool and pour over ice.
