Nutmeg (Myristica Fragrans) is a species of the genus myristica. The small, round spice imparts an aromatic, earthy taste and is best used sparingly in a range of dishes both savoury and sweet.Nutmeg is usually grated into or on to dishes. It is not only used in sweet dishes (being paprticularly suited to milky, creamy puddings & desserts), but also is great in potato dishes such as dauphinoise. It is also delicious used in gratins and rice dishes. Try adding a sprinking on top of a frothy coffee or as a warming touche to a casserole.
