CHOCOLATE ORIGINS

Theobroma Cacao is the botanical name from which these amazing superfoods originate. Over the years there has been much confusion over it's name - cacao or cocoa? Many argue they describe different stages of the chocolate process but in fact, the first originates from the botanical name and was the only word used centuries ago in all hispanic languages. The latter is believed to have been formed by English speakers, from a spelling mistake which was never corrected. So, both words represent the same wholefoods.

Originating from organically grown pods in Peru, our raw and certified organic cacao nibs and cacao powder super foods are produced by selecting the best and fully ripened pods and carefully breaking open to remove the cocoa beans or seeds. The white whole foods seeds or beans are carefully removed from the pod and fermented in baskets with banana leaves which optimises the fermentation process. Enzymes break down proteins into amino acids over a period of 7 days.

The fermentation process changes the flavour and colour of the cocoa beans superfoods into the chocolate brown we all know and love. The seeds or cocoa beans are spread to dry naturally after fermentation and then processed raw to avoid any loss of nutritional goodness in these wholefoods. The beans are naturally washed, then further dried to loosen the skins and milled to produce a bean and skin whole foods mixture. The mixture is carefully sieved and the skins are removed leaving only cocoa nibs which are then pressed to abstract cocoa butter leaving a cocoa powder cake which is then further milled into the finest organic cocoa powder. Nibs and beans are the purest form of chocolate super foods throughout the whole process and our cacao powder has not bean altered or added to, keeping it in its original state for maximum nutritive content.

Our organic cacao nibs are never roasted. They are in their raw and natural state in order to keep all their nutritional goodness. Roasting the nibs at high temperature (which they do to create chocolate) can severely reduce the nutritional properties and antioxidant levels.

Both our cocoa nibs and cocoa powder are organically certified by the Soil Association giving you the best reassurance that the product meets the highest organic standards in an ethical manner.
