Sesame seeds are protected by a capsule, which bursts open when they are ripe. However, ripening times vary, so after hand cutting the plants they are left to ripen for a few days. Once all the capsules have opened they are shaken over a cloth to release the seeds.

'Open sesame’. In the fairy tale ’Ali Baba and the 40 thieves’ the sesame symbolises wealth. When the capsule opens, it releases a real treasure - sesame seeds.

There are white, yellow, brown and black sesame seeds but we only use white ones, which are also used for bread making.

Because we press the seeds untreated, not only are the main constituents retained, but so is the sesamolin, a substance peculiar to this plant, which acts as a natural anti-oxidant and preserves the oil. Our sesame oil reminds one of hazelnuts due to its very mild flavour. It adds an oriental flavour to your food and should only be heated very gently. Mix it with vegetables, fish, rice and noodles just before serving. Sesame oil, considered to be the pearl of macrobiotic cuisine, has many health-promoting ingredients. It increases concentration and has a detoxifying effect.
